I once again attempted to make a recipe found on a Vegan Tumblr. This time it did not go well. At all.

I tried to make “ricotta” (tofu) and spinach ravioli using won ton wrappers. I followed the directions. What I didn’t realize is that the filling should cool before you put it in the won ton wrappers. I also was just making the raviolis then putting them in a bowl. The heat from the filling caused the won tons to cook, and then since they were on top of each other they all just cooked into a huge ball of chewy gross overcooked won ton.

I managed to salvage a few of them from the top of the bowl, cooked them, and put earth balance butter on top as instructed. But they all fell apart. And I haven’t eaten it yet.

VEGAN COOK: FAIL.

I made VEGAN QUESO TONIGHT! This was probably the first time I saw a recipe on a Vegan Tumblr and actually made it and not just bookmark it.
This is made with macadamia nuts, red bell pepper, nutritional yeast and salt. It was so good. 
Ugh that food processor was the best thing I’ve ever bought.

Yall, I wanna be a good cook real bad. I watch Top Chef, Chopped, Etc. and I’m all like “Why can’t I do that?” So step 1 was getting myself some good vegan cookbooks- which I did thanks to Christmas presents.

Since becoming a veg head a few years back I have missed Chicken Pot Pies SO much. So when my THE VEGAN TABLE cookbook had a recipe for a tempeh and eggplant pot pie I was all like, DUH.

I changed a few things- like I’m still scared of tempeh so I used tofu. And fennel seeds sounded too uppity for me so I used chopped almonds. And I added chopped kale for extra health, and cause I love my new food processor more than any other appliance. 

Baked the tofu, steamed the eggplant, baked the pie crust, sauteed the veggies then baked the pie. I. FREAKIN. COOKED. 

It might look gross in the pic but it was SO GOOD. And ALL VEGAN BITCH. 

I’ve never felt more like an amazing person. Goal is to hard-core cook at least once a week.

LightLife is one of my favorite lines of vegan yummies. The front of this package looked so yummy I had to try it. Opened it and as you can see the it didn’t live up to it’s glamour shot. 
It was OKAY. No lemon or pepper flavor at all. I used chili oil and garlic salt to pretty much re-season it. So my advice would be- don’t buy it.

Domestication Station:
I decided to finally buy the coffee maker of the rich and famous- the Keurig single-cup brewer. You put a little cup of whatever kind of coffee/tea/hot chocolate/cider you want and hit a button and it makes a single cup of your size preference in 30 seconds. LIKE MAGIC.
I’ve already become obsessed with it. It’s saved me so much time/money already. I have virtually stopped going to Starbucks (Might as well throw this gold card out!) and I haven’t had to scoop coffee grinds, measure, clean up anything. TRUE LUXURY LIFE STATUS.
So then I bought the Aerolatte milk frother (Keurig makes one thats 60 bucks, this one was 20 and with my BB&B 20% off coup it was 16) cause it got the best reviews online. I was skeptical whether or not it would froth up my almond milk but it did LIKE A CHAMP.
Then I bought this yummy chocolate/coffee/sugar sprinkle grinder from TJ’s to top things off, along with cinnamon/vanilla/caramel options.
So now I am pretty much a futuristic barista in my own home. If anyone ever comes over you better come wanting a coffee beverage!

It tastes as good as it LOOKS.
